Matcha Smoothie Bowl

My eating style consists of trying to eat healthy as often as possible so that I can splurge and eat delicious food when it’s in front of me.  My breakfast and lunches during the week are usually pretty healthy (unless someone puts top notch bagels, eggs benedict or donuts in front of me).  My dinners vary between a few heavier dinners during the week, and usually on weekends, but at least 3-4 light meals (e.g., wraps, salads, fish/meat and veggies).

One of my very favorite breakfasts is a great slice of sour dough toast with ghee.  I try to have a homemade jar of ghee in the house at all times.  It is super easy to make, rich in vitamins and good for digestion/reducing inflammation.  During the summer, though, I’ve been steering more towards granolas, fruits, smoothies, etc. to start the day.  Recently I combined two of my current fave ingredients: matcha and fresh mint from our garden to make an epic smoothie bowl.  It was seriously delicious!

I really love matcha, and try to come up with new ways to use it.  (In small amounts since it can be so expensive!)  It is supposed to have tons of health benefits, including boosting metabolism, detoxing the body and is full of antioxidants.  Definitely a meal you can feel good about eating.

My favorite smoothie topics tend to be fresh fruit, granola, coconut chunks, flax seeds, or a scoop of almond butter.  Let me know what your favorites are in the comments below.  I’m always looking to change it up!

Without further ado…

Matcha + Mint Smoothie Bowl Recipe:

*Slice and freeze 2 bananas.

*Once frozen, combine in blender with 3/4 c of coconut milk and 1/2 c yogurt (Note: You can make the smoothie bowl without yogurt, for sure.  Just add more coconut milk (about 1/4 more).  I just happen to prefer it for extra creaminess and always have a container in the fridge).

*Add 1 1/2 tsp matcha powder and a few sprigs of fresh mint.

*Blend until smooth, pour into bowl, and add your favorite toppings!  This time we went with raspberries, blueberries, kiwi, strawberries and coconut flakes.  Serve with a snazzy gold spoon (or obviously any spoon you have in the house!)
