Taco Bout A Party!!

I am mildly obsessed with tacos.  I mean I recently threw a taco themed party for one of my favorite people.  (Because who doesn’t love tacos?!).  I love eating tacos at food trucks, in restaurants and cooking various versions right at home.

Our latest taco feast included a few firsts for us.  We usually make our own pico, guac and red salsa, but I’ve been itching to try homemade tortillas and tomatillo salsa.  I was really excited with how they both turned out!  We used to use ground beef (with a taco seasoning packet + a can of enchilada sauce), but have recently turned to the more authentic version with crispy pork or chicken.  Check out our recipes below, and leave us a comment with what your favorite taco tricks, toppings, and sides are!

Tortilla Recipe:
✅Mix 2 cups flour with 1/2 tsp salt
✅Drizzle in 3 tblsp olive oil and 3/4 c water
✅Knead until a sticky ball and let sit covered with a wet towel for 30 min
✅Split into 8 balls and roll out into thin discs.  We first flattened each ball between two heavy cutting boards, and then used a rolling pin to roll out.  I have been eyeing a tortilla press, and make need to pull the trigger and get one!
✅Fry in cast iron pan about 30 seconds on each side

Meat Recipe:

✅Dice boneless/skinless chicken thighs and pork chops (keep separate!)
✅Add dry rub to each meat: 1/2 tspn onion powder, 1/2 tspn garlic powder, 1/2 tspn black pepper, 3/4 tspn salt, 3/4 tspn paprika, 1/2 tspn cayenne
✅Let marinate for at least an hour
✅Cook in seasoned cast iron pan on high until carmelized (about 10 minutes total).  We threw our cast iron on the grill and cranked up the heat which really gave us some nice crunch (but left the meat nice and juicy!)

Salsa recipes:
✅Roast tomatillos (split in half) in oven at 425 until translucent (about 20 min)
✅After cooled, blend in blender and add to bowl
✅Blend 14 oz canned whole San Marzano tomatoes and put in second bowl
✅Dice: red onion, jalapeños, and cilantro, and add to each bowl generously

✅Finish each bowl of salsa with lime juice, salt, pepper and a good stir
